With a culinary career that spans more than three decades, Chef Alex Stanislaw has headed up the kitchens of several noteworthy Maui restaurants. Originally from upstate New York, Chef Alex graduated with honors from the Culinary Institute of America, and upon graduation, was recruited for a position at Maui’s Kapalua Bay Hotel. It was here that his love for Hawaiian fish began. He subsequently had the opportunity to take over the kitchen at Erik’s Seafood Grotto in Kahana, where he developed close relationships with local fisherman and fish purveyors. These relationships were strengthened when Chef Alex became part of a team that opened up The Plantation House Restaurant in Kapalua in 1991, and remained steadfast when he took over the kitchen at Kahana Grill 21 years later. Throughout his career, Chef Alex has evolved a style of cooking that blends the clean, fresh flavors of the ocean with the rustic simplicity of warm weather climates.
In May of 2014, Chef Alex was given the opportunity to bring his culinary knowledge to the DK Restaurants group, joining their team as Executive Chef of Maui Fish & Pasta in Kaanapali. With his passion for all things Maui fresh, Chef Alex hopes to honor DK’s concept of offering intriguing fish preparations to Maui diners, along with contemporary and classic pasta dishes that feature the restaurant’s fresh, house-made pasta.
